Ingredients

  • 4 salmon fillets
  • 1 cup lump crab meat
  • 1 cup shrimp, peeled and deveined
  • 1/2 cup cream cheese
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tablespoons fresh dill or parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions, bell peppers, and garlic until fragrant.
  3. In a bowl, mix the sautéed vegetables with crab meat, shrimp, cream cheese, breadcrumbs, fresh herbs, lemon juice, salt, and pepper.
  4. Carefully butterfly the salmon fillets to create pockets for the stuffing.
  5. Generously fill each fillet with the seafood stuffing.
  6. Bake in the preheated oven for 20-25 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Garnish with extra herbs and a drizzle of lemon juice before serving.
