Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Fold in the sautéed spinach and crumbled feta.
- Grease a muffin tin with non-stick spray or liners.
- Pour the egg mixture into the muffin tin evenly.
- Bake in the oven for 20 minutes, or until set and lightly golden.
Notes
Add a splash of milk for a fluffier texture. Store in an airtight container in the fridge for up to 5 days or freeze for 3 months.
