- 8 oz spaghetti
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 1/2 cup olives, sliced
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- Salt, to taste
- Pepper, to taste
Instructions
- Cook spaghetti according to package instructions until al dente, about 8-10 minutes.
- While pasta cooks, chop the vegetables.
- Whisk together olive oil, lemon juice, salt, and pepper in a bowl to make the vinaigrette.
- Drain spaghetti and cool under cold water.
- Toss the cooled spaghetti with chopped vegetables and vinaigrette in a large bowl.
- Season to taste and serve chilled or at room temperature.
Notes
Let the salad sit in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
