Ingredients

Instructions

  1. Cook spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. While pasta cooks, chop the vegetables.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a bowl to make the vinaigrette.
  4. Drain spaghetti and cool under cold water.
  5. Toss the cooled spaghetti with chopped vegetables and vinaigrette in a large bowl.
  6. Season to taste and serve chilled or at room temperature.
