A warm, hearty, and flavorful white chicken chili that’s easy to make for cozy nights.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 1 can (4 oz) diced green chiles
- 8 oz cream cheese
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 cup chopped onions
- 2 cloves garlic, minced
- Fresh cilantro, for garnish
- Juice of 1 lime
Instructions
- Dice the chicken breasts into bite-sized pieces.
- Heat oil in a large pot over medium heat; sauté onions and garlic until translucent (about 3 minutes).
- Add the diced chicken, cumin, and chili powder; cook until golden brown (5-7 minutes).
- Stir in the white beans and chicken broth; mix well.
- Lower the heat and add cream cheese; stir until melted (about 3 minutes).
- Mix in green chiles and lime juice; let simmer on low heat for about 20 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
For a thicker chili, mash some of the beans before adding them. Use rotisserie chicken to save time.
