- 1 lb ground turkey
- 2 large eggs
- 1 cup breadcrumbs (plain or seasoned)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup finely chopped vegetables (onions, bell peppers, or zucchini)
- 1 tsp garlic powder
- 1 tsp Italian herbs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a muffin tin or use cupcake liners.
- In a large bowl, mix ground turkey, eggs, breadcrumbs, shredded cheese, chopped vegetables, garlic powder, Italian herbs, salt, and pepper until just combined.
- Scoop the mixture into muffin cups until three-quarters full.
- Bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- Allow cooling for a few minutes before serving warm.
Notes
Store leftovers in an airtight container for 3-4 days. Reheat in the microwave for 1-2 minutes or in an oven at 350°F (175°C).
