Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced sweet potatoes in salted water for 15-20 minutes until they are tender. Drain well.
- In a mixing bowl, mash the sweet potatoes and mix in brown sugar, melted butter, vanilla extract, and cinnamon until smooth.
- Spread the mixture evenly in a baking dish.
- In another bowl, combine chopped pecans with remaining brown sugar and melted butter; sprinkle this over the sweet potato mixture.
- Bake for 25-30 minutes until bubbly and golden brown.
- Serve warm.
Notes
For added flavor, consider using a touch of nutmeg along with the cinnamon. If you like your casserole extra crunchy, feel free to add more chopped pecans on top.
