  • 4 cups sweet potatoes, peeled and diced
  • 1/2 cup brown sugar
  • 1 stick (1/2 cup) butter, melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the diced sweet potatoes in salted water for 15-20 minutes until they are tender. Drain well.
  3. In a mixing bowl, mash the sweet potatoes and mix in brown sugar, melted butter, vanilla extract, and cinnamon until smooth.
  4. Spread the mixture evenly in a baking dish.
  5. In another bowl, combine chopped pecans with remaining brown sugar and melted butter; sprinkle this over the sweet potato mixture.
  6. Bake for 25-30 minutes until bubbly and golden brown.
  7. Serve warm.

Notes
