Description

A comforting and hearty dish combining ground beef, vegetables, and creamy mashed potatoes, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 4 cups mashed potatoes (homemade or store-bought)
  • 2 tbsp olive oil
  • 1 tsp thyme (fresh or dried)
  • 1 tsp rosemary (fresh or dried)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  2. Add in the ground beef and cook until browned. Mix in the diced carrots and frozen peas, cooking together for an additional 5 minutes.
  3. Pour in the vegetable broth and sprinkle in thyme and rosemary. Simmer for about 10 minutes until it thickens slightly.
  4. If using homemade mashed potatoes, mix in butter and milk until smooth.
  5. In a baking dish, layer the meat mixture on the bottom, then dollop the mashed potatoes on top, creating texture with a fork.
  6. Preheat the oven to 400°F (200°C) and bake for 25-30 minutes until the top is golden brown.
  7. Serve hot and enjoy!

Notes

Pairs well with a simple green salad or crusty bread. For extra flavor, add a dollop of ketchup or sprinkle fresh herbs on top.
