A quick and easy dish perfect for a late dinner, featuring sautéed mushrooms and zucchini that can be enjoyed on their own or paired with other meals.

Ingredients

  • 2 zucchinis, sliced
  • 2 cups mushrooms, sliced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional: garlic, red pepper flakes, lemon juice

Instructions

  1. Preheat your skillet over medium-high heat.
  2. Drizzle olive oil into the skillet and add the mushrooms first.
  3. After a couple of minutes, add the zucchini.
  4. Cook for 3-4 minutes, stirring occasionally.
  5. Season with salt and pepper, adding garlic or red pepper flakes if desired.
  6. Once the vegetables are browned and tender, remove from heat and serve.

Notes

Leftovers can taste even better the next day; store in an airtight container for up to three days. Reheat in a skillet or microwave.
