- 1 pound sausage (Italian or your choice)
- 2 cups fresh spinach, chopped
- 2 cups tomatoes, diced
- 8 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or feta)
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and brown the sausage until cooked through.
- Add the chopped spinach and tomatoes to the skillet, sautéing until the spinach wilts.
- In a bowl, beat the eggs and season with salt and pepper.
- Combine the sausage mixture with the beaten eggs and half the cheese.
- Pour the mixture into a greased 9×13-inch baking dish and sprinkle the remaining cheese on top.
- Bake for 35 minutes or until the eggs are set and the top is golden brown.
- Let the casserole rest for 10 minutes before slicing and serving.
Notes
Serve warm, garnished with fresh herbs. Great for leftovers and easy to reheat.
