Ingredients

  • 1 pound sausage (Italian or your choice)
  • 2 cups fresh spinach, chopped
  • 2 cups tomatoes, diced
  • 8 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or feta)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and brown the sausage until cooked through.
  3. Add the chopped spinach and tomatoes to the skillet, sautéing until the spinach wilts.
  4. In a bowl, beat the eggs and season with salt and pepper.
  5. Combine the sausage mixture with the beaten eggs and half the cheese.
  6. Pour the mixture into a greased 9×13-inch baking dish and sprinkle the remaining cheese on top.
  7. Bake for 35 minutes or until the eggs are set and the top is golden brown.
  8. Let the casserole rest for 10 minutes before slicing and serving.
