- 2 cups Dried Beans (Navy, Pinto, or Kidney) (Soaked overnight)
- 1 medium Onion, finely chopped
- 2–3 cloves Garlic, minced
- 1 cup Brown Sugar
- 1 cup Ketchup
- 2 tablespoons Yellow Mustard
- 2 tablespoons Apple Cider Vinegar
- to taste Salt
- to taste Black Pepper
- 2 cups Water or Vegetable Broth
Instructions
- Soak the dried beans overnight in plenty of water. Drain and rinse them thoroughly.
- In a large pot, cover the soaked beans with fresh water or vegetable broth. Bring to a boil, then reduce to a simmer and cook for 45 minutes to 1 hour until tender. Drain and set aside.
- Preheat your oven to 350°F (175°C).
- In a skillet, heat oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
- In a mixing bowl, combine the cooked beans, sautéed onion and garlic, brown sugar, ketchup, mustard, apple cider vinegar, and season with salt and pepper. Mix well.
- Transfer the mixture to a baking dish, cover tightly with aluminum foil, and bake for 1 hour.
- Remove the foil, stir gently, and bake uncovered for an additional 30 minutes.
- Let the beans cool for a few minutes before serving.
Notes
You can customize the sweetness by adjusting the brown sugar and add smoked paprika or bacon for a smokier flavor.
