- 2 pounds sweet potatoes, peeled and cubed
- 3–4 tablespoons unsalted butter
- ⅓ to ½ cup warm milk or cream
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
- Start with about 2 pounds of orange-fleshed sweet potatoes. Peel and cut into 1–1½ inch cubes.
- For boiling: place in a medium saucepan, cover with cold water, bring to a boil, then simmer for 15–20 minutes until fork-tender; drain well.
- For roasting: toss whole or halved sweet potatoes with a little oil, roast at 400°F (200°C) for 35–45 minutes until very soft, then scoop flesh.
- Mash with butter, warm milk or cream, salt, and pepper; adjust seasoning and texture as needed.
Notes
Warm your butter and milk slightly before adding for a smoother mash. Don’t overwork the mash to avoid a gluey texture.
