Description

A simple, creamy, and slightly sweet side dish perfect for weeknights or holiday dinners.


Ingredients

  • 2 pounds sweet potatoes, peeled and cubed
  • 34 tablespoons unsalted butter
  • to ½ cup warm milk or cream
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Start with about 2 pounds of orange-fleshed sweet potatoes. Peel and cut into 1–1½ inch cubes.
  2. For boiling: place in a medium saucepan, cover with cold water, bring to a boil, then simmer for 15–20 minutes until fork-tender; drain well.
  3. For roasting: toss whole or halved sweet potatoes with a little oil, roast at 400°F (200°C) for 35–45 minutes until very soft, then scoop flesh.
  4. Mash with butter, warm milk or cream, salt, and pepper; adjust seasoning and texture as needed.

Notes

Warm your butter and milk slightly before adding for a smoother mash. Don’t overwork the mash to avoid a gluey texture.
