Description

Easy Kid-Friendly Egg Muffins are quick to make, healthy, and customizable, making breakfast easy and fun for kids.


Ingredients

Scale
  • 6 large Eggs
  • 0.5 cup Milk
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Finely Chopped Bell Peppers
  • 1 cup Chopped Fresh Spinach
  • 1 pinch Salt
  • 1 pinch Pepper
  • 0.5 cup Diced Tomatoes or Cooked Sausage

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard 12-cup muffin tin with non-stick cooking spray or line with paper liners.
  3. In a large mixing bowl, crack the eggs and whisk until frothy.
  4. Add the milk and whisk until smooth.
  5. Stir in the shredded cheddar cheese until evenly distributed.
  6. Fold in the finely chopped bell peppers and chopped spinach.
  7. Season with salt and pepper to taste.
  8. Fold in optional add-ins if desired.
  9. Pour the egg mixture evenly into the prepared muffin cups, filling each about two-thirds full.
  10. Bake for 18-20 minutes until puffed and golden brown.
  11. Allow to cool for a few minutes before removing from the tin.
  12. Serve warm or at room temperature.
