Delicious and crispy zucchini fritters, perfect as a snack, appetizer, or side dish.

Ingredients

  • 2 medium Zucchini (Grated and excess moisture squeezed out)
  • 1 cup All-purpose flour (Can substitute with gluten-free flour)
  • 2 large Eggs (Acts as a binder)
  • 1/2 cup Green onions (Finely chopped)
  • 1 teaspoon Garlic powder (For flavor enhancement)
  • 1 teaspoon Salt (Adjust to taste)
  • 1/2 teaspoon Black pepper (Freshly ground)
  • 1/4 cup Olive oil (For frying)

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large mixing bowl, combine the drained zucchini, flour, eggs, green onions, garlic powder, salt, and black pepper. Mix until well combined.
  3. Heat a skillet over medium heat and add 2 tablespoons of olive oil. Scoop 1/4 cup of the mixture into the skillet and flatten slightly.
  4. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
  5. Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Repeat with remaining mixture.
  6. Serve warm with a side of yogurt or dip.

Notes

For extra crunch, consider adding grated cheese like parmesan into the mixture. Adjust seasoning to taste.
