- 1/2 cup (113 g) unsalted butter
- 1/2 cup (100 g) packed brown sugar
- 1 large egg
- 1/2 cup (120 g) molasses
- 2 1/4 cups (280 g) all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/2 tsp salt
Instructions
- Cream the unsalted butter and brown sugar until light.
- Beat in the egg and molasses.
- Whisk together the flour, baking soda, spices, and salt.
- Fold the dry mixture into the wet mixture until just combined.
- Chill the dough for 1 hour (or overnight).
- Portion the dough into 1-inch balls and place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 8–10 minutes until edges are set but centers are still soft.
- Let cool for 5 minutes on the sheet, then transfer to a rack to finish cooling.
Notes
Chilling the dough overnight enhances flavor and chewiness. For even baking, use a cookie scoop for uniform sizes.
