Ingredients

  • 12 tsp chili flakes or Sriracha (to taste)
  • 2 tbsp rice vinegar (or white vinegar)
  • 2 tbsp soy sauce
  • 1 tbsp sugar (or honey)
  • 1 tbsp toasted sesame oil
  • 1 tbsp sesame seeds
  • 3 green onions, sliced

Instructions

  1. Thinly slice the cucumbers into half-moon shapes.
  2. Mince the garlic and combine it with chili flakes, vinegar, soy sauce, sugar, and sesame oil in a bowl.
  3. Toss the sliced cucumbers in the dressing and let them sit for 10-15 minutes for the flavors to meld.
  4. Add sesame seeds and green onions before serving.

Notes

For extra flavor, sprinkle sliced cucumbers with salt and let them sit for a few minutes before mixing with the dressing.
