A fresh and vibrant salad combining cucumbers, cherry tomatoes, and a zesty dressing, perfect for busy weeknight dinners.

			- 2 large Cucumbers (Peeled and sliced)
 - 1 cup Cherry Tomatoes (Halved)
 - 0.5 medium Red Onion (Thinly sliced)
 - 1 handful Fresh Parsley (Chopped)
 - 3 tablespoons Olive Oil (Extra virgin)
 - 2 tablespoons Apple Cider Vinegar
 - 1 teaspoon Honey
 - to taste Salt
 - to taste Black Pepper (Freshly cracked)
 
Instructions
- Wash cucumbers, cherry tomatoes, and parsley under cold running water. Pat dry.
 - Peel and slice cucumbers into thin rounds. Place them in a large mixing bowl.
 - Halve cherry tomatoes and add them to the bowl with cucumbers.
 - Thinly slice red onion and add to the mixing bowl.
 - Chop fresh parsley and add to the bowl.
 - In a small bowl, whisk together olive oil, apple cider vinegar, and honey until well combined.
 - Pour the dressing over the salad ingredients and toss gently to coat.
 - Season with salt and freshly cracked black pepper to taste.
 - Let the salad sit for 5 to 10 minutes to allow flavors to meld.
 - Toss again before serving and enjoy!
 
Notes
For best results, use fresh ingredients and adjust the dressing to your liking. Chill for 30 minutes before serving for an extra refreshing taste.
