Description

A warm and flavorful veggie soup packed with wholesome ingredients, perfect for chilly days.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups assorted fresh vegetables (carrots, celery, bell peppers, etc.)
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic. Sauté until soft.
  3. Add the assorted vegetables and sauté for a few more minutes.
  4. Stir in the vegetable broth, dried thyme, and dried basil.
  5. Bring to a boil, then reduce heat and let it simmer for about 30 minutes until the veggies are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs.
