- 1 cup shredded cheddar cheese

- 2 cups chilled leftover mashed potatoes

Instructions
- Preheat oven to 400°F and grease muffin tin with butter or nonstick spray.
- In a large bowl, combine mashed potatoes, eggs, milk or cream, cheddar cheese, green onions or chives, garlic powder, black pepper, and salt. Mix until smooth.
- Scoop the mixture into the muffin tin, filling almost to the top and leveling the tops.
- Bake for 25 to 30 minutes until tops are crispy and golden. Let cool for 5 minutes before removing.
- Serve warm with optional toppings like extra cheese, ketchup, or sour cream.

Ensure potatoes are smooth for best results. Feel free to experiment with different cheeses and add-ins like bacon or vegetables.
