A delightful twist on classic mashed potatoes, turned into crispy and creamy cheesy potato puffs.

Ingredients

  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped green onions or chives
  • 1/4 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 2 cups chilled leftover mashed potatoes
  • Butter or nonstick spray for greasing

Instructions

  1. Preheat oven to 400°F and grease muffin tin with butter or nonstick spray.
  2. In a large bowl, combine mashed potatoes, eggs, milk or cream, cheddar cheese, green onions or chives, garlic powder, black pepper, and salt. Mix until smooth.
  3. Scoop the mixture into the muffin tin, filling almost to the top and leveling the tops.
  4. Bake for 25 to 30 minutes until tops are crispy and golden. Let cool for 5 minutes before removing.
  5. Serve warm with optional toppings like extra cheese, ketchup, or sour cream.
