- 1 cup Biscoff Cookie Butter
- 1 cup Mascarpone Cheese
- 1 cup Heavy Cream
- 1/4 cup Sugar
- 16 cookies Biscoff Cookies
- 1 cup Coffee
- 1 teaspoon Vanilla Extract
- 1 pinch Salt
- 2 tablespoons Cocoa Powder
Instructions
- In a mixing bowl, combine the Biscoff cookie butter, mascarpone cheese, and sugar. Mix well until smooth.
- In another bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the Biscoff mixture until fully combined.
- Prepare the coffee and let it cool. Dip each Biscoff cookie quickly into the coffee, making sure they soak without getting too soggy.
- Layer half of the soaked cookies in the bottom of a serving dish.
- Spread half of the Biscoff cream mixture over the cookies.
- Repeat with another layer of soaked cookies, followed by the remaining Biscoff cream mixture.
- Dust the top with cocoa powder.
- Refrigerate for at least 2 hours, but longer is better for the flavors to meld.
Notes
Ensure mascarpone cheese is at room temperature for easy mixing. Don’t soak cookies too long in coffee for best results.
