These Easy Bean Burritos are my go-to weeknight dinner: ready in about 30 minutes and loaded with smoky, savory flavor.
Ingredients

- 1 small diced onion
- 2 cloves minced garlic
- 1 tbsp neutral oil
- 2 cups cooked or canned black or pinto beans (drained and rinsed)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp chili powder
- 2–3 tbsp reserved bean liquid or water
- 4 (8–10 inch) flour tortillas
- 1/4 cup shredded cheese or salsa
Instructions
- Sauté diced onion and minced garlic in neutral oil over medium heat until translucent, about 4–5 minutes.
- Add beans, ground cumin, smoked paprika, chili powder, and reserved bean liquid; simmer for 4–6 minutes.
- Mash half the beans with the back of a spoon for creaminess.
- Warm tortillas in a dry skillet for 20–30 seconds per side.
- Fill each tortilla with 1/2 cup bean mixture and 1/4 cup cheese or salsa, fold, and crisp in a 350°F oven for 6–8 minutes or skillet for 1–2 minutes per side.
Notes
For a crispy exterior, pan-fry burritos after baking. You can also fill them with avocado and lime for added freshness.
