Ingredients

- 1 lb boneless chicken breast or thighs, cut into chunks
- 1 cup BBQ sauce
- 1 cup pineapple chunks (fresh or canned)
- 1 bell pepper, chopped
- 1 red onion, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
- Garlic powder, optional
Instructions
- Soak wooden skewers in water for at least 20 minutes.
- Marinate chicken in BBQ sauce for 20 minutes or overnight.
- Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating ingredients.
- Brush skewers with extra BBQ sauce.
- Preheat grill to medium-high and grill kabobs for 10-15 minutes, turning occasionally, until chicken is cooked through.
- Alternatively, broil kabobs in the oven on high for similar timing.
- Baste with additional sauce before serving, if desired.
Notes
For best results, cut chicken and veggies to a similar size and don’t overcrowd the skewers for improved caramelization.
