Delicious BBQ Pineapple Chicken Kabobs that combine smoky barbecue flavors with sweet caramelized pineapple, perfect for weeknight dinners.

Ingredients

  • 1 lb boneless chicken breast or thighs, cut into chunks
  • 1 cup BBQ sauce
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Garlic powder, optional

Instructions

  1. Soak wooden skewers in water for at least 20 minutes.
  2. Marinate chicken in BBQ sauce for 20 minutes or overnight.
  3. Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating ingredients.
  4. Brush skewers with extra BBQ sauce.
  5. Preheat grill to medium-high and grill kabobs for 10-15 minutes, turning occasionally, until chicken is cooked through.
  6. Alternatively, broil kabobs in the oven on high for similar timing.
  7. Baste with additional sauce before serving, if desired.

Notes

For best results, cut chicken and veggies to a similar size and don’t overcrowd the skewers for improved caramelization.
