- 4 medium sweet potatoes
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- Olive oil
- Salt and pepper to taste
- Lemon juice (for serving)
- Cherry tomatoes (optional)
- Smoked paprika (optional)
- Toasted walnuts (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash sweet potatoes, poke each several times with a fork, and bake for about 45 minutes until soft.
- While sweet potatoes are baking, heat a small amount of olive oil and sauté fresh spinach in a pan until wilted.
- In a bowl, combine cooked spinach and crumbled feta. Season with salt and pepper.
- Once the sweet potatoes are cooked, cut them in half and fluff the insides with a fork.
- Stuff each sweet potato half with the spinach and feta mixture.
- Return stuffed sweet potatoes to the oven for an additional 10 minutes.
- Serve with a squeeze of lemon juice and your choice of sides.
