Instructions
- In a bowl, whisk together dry ingredients: flour, coconut flakes, sugar, baking powder, and salt.
- In another bowl, combine wet ingredients: coconut milk, egg, and melted butter.
- Mix wet and dry ingredients until just combined; a few lumps are fine.
- Preheat a griddle or skillet over medium heat.
- Ladle batter onto the griddle, cooking until bubbles form, then flip and cook until golden.
Notes
Serve with whipped cream and maple syrup, or add fresh fruits for extra flavor.
