Description

A hearty and delicious vegetable lasagna packed with layers of flavor and healthy ingredients.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups marinara sauce
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the lasagna noodles according to package instructions. Drain and set aside.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and garlic, and sauté until softened.
  5. Stir in the zucchini and bell pepper, cooking until tender.
  6. Toss in the spinach and cook until wilted.
  7. In a bowl, mix the ricotta cheese, oregano, salt, and pepper.
  8. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  9. Layer 3 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, a third of the mozzarella, and a layer of marinara sauce.
  10. Repeat the layers once more, and top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  11. Bake for 45 minutes or until the cheese is bubbly and golden.
  12. Let cool for 10 minutes before slicing and serving.

Notes

For extra flavor, feel free to add fresh herbs like basil or thyme.
