- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups spinach, chopped
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups marinara sauce
- 15 oz ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the lasagna noodles according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the zucchini and bell pepper, cooking until tender.
- Toss in the spinach and cook until wilted.
- In a bowl, mix the ricotta cheese, oregano, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, a third of the mozzarella, and a layer of marinara sauce.
- Repeat the layers once more, and top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
- Bake for 45 minutes or until the cheese is bubbly and golden.
- Let cool for 10 minutes before slicing and serving.
Notes
For extra flavor, feel free to add fresh herbs like basil or thyme.
