- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 cup chopped nuts (optional, walnuts or pecans)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix almond flour, coconut sugar, cinnamon, and baking powder until combined.
- In another bowl, whisk together unsweetened applesauce and vanilla extract until smooth.
- Combine the wet and dry mixtures, stirring until fully blended. Optionally, fold in chopped nuts.
- Scoop spoonfuls of dough onto the prepared baking sheet, making sure to leave space between each scoop.
- Bake for 12-15 minutes or until the edges are golden brown. Let cool slightly before serving.
Notes
Store in an airtight container at room temperature for up to a week or freeze for up to three months. Thaw at room temperature or warm slightly in the oven when ready to enjoy.
