Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 cup chopped nuts (optional, walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, coconut sugar, cinnamon, and baking powder until combined.
  3. In another bowl, whisk together unsweetened applesauce and vanilla extract until smooth.
  4. Combine the wet and dry mixtures, stirring until fully blended. Optionally, fold in chopped nuts.
  5. Scoop spoonfuls of dough onto the prepared baking sheet, making sure to leave space between each scoop.
  6. Bake for 12-15 minutes or until the edges are golden brown. Let cool slightly before serving.
