Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 cup chopped nuts (optional, walnuts or pecans)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the almond flour, coconut sugar, cinnamon, and baking powder until combined.
  3. In another bowl, whisk together the unsweetened applesauce and vanilla extract until smooth.
  4. Combine the wet and dry mixtures, stirring until fully blended. If you like, you can fold in the chopped nuts.
  5. Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 12-15 minutes or until the edges are golden brown. Allow the cookies to cool slightly before serving.

Notes

Store any leftover cookies in an airtight container at room temperature for up to a week. For longer storage, freeze layers with parchment paper.
