Instructions
- Heat oil in a pan and add cumin seeds, allowing them to sizzle.
- Add chopped onions and sauté until golden brown.
- Stir in chopped tomatoes and spices (garam masala, chili powder, salt) and cook until the tomatoes break down.
- Let the mixture simmer until thickened, about 5 minutes.
- Add hard-boiled eggs, ensuring they are well coated with the masala, and simmer for another 5 minutes.
- Garnish with fresh cilantro and serve hot over rice or with bread.
