  • 1 teaspoon sugar (optional, to balance acidity)

Instructions

  1. Heat oil in a pan and add cumin seeds, allowing them to sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in chopped tomatoes and spices (garam masala, chili powder, salt) and cook until the tomatoes break down.
  4. Let the mixture simmer until thickened, about 5 minutes.
  5. Add hard-boiled eggs, ensuring they are well coated with the masala, and simmer for another 5 minutes.
  6. Garnish with fresh cilantro and serve hot over rice or with bread.
