Ingredients

  • 2 cups Fresh Cranberries (or Frozen Cranberries)
  • 2 large Oranges (juiced and zested)
  • 1 cup Granulated Sugar (or Coconut Sugar or Honey)
  • 3 large Eggs (or Flaxseed Meal as egg replacer)
  • ½ cup Unsalted Butter (or Vegan Butter)
  • 1 (9-inch) Tart Shell (or Gluten-Free Tart Shell)

Instructions

  1. Preheat the oven and bake the tart shell, blind baking if desired.
  2. In a saucepan, combine cranberries, orange juice, and zest; heat until cranberries burst.
  3. Strain the mixture to obtain the juice and discard solids.
  4. Add sugar and eggs to the juice and whisk well.
  5. Slowly whisk in butter until melted and mixture thickens to a glossy custard.
  6. Pour the filling into the cooled tart shell and let it cool completely.
  7. Chill in the fridge until set, then slice and serve.

Notes

Strain the juice well to avoid gritty texture and let cool completely before slicing for best results. Serve with whipped cream or toasted almonds.
