- 1 large Granny Smith or Honeycrisp apple, peeled and diced
- 1 cup soft caramels, chopped
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, room temperature
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Optional: a pinch of nutmeg
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the dry ingredients: flour, baking soda, salt, and cinnamon.
- In another bowl, cream together the butter and brown sugar until fluffy.
- Beat in the egg and vanilla extract to the butter mixture.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Gently fold in the diced apple and chopped caramels.
- Chill the dough for at least 30 minutes.
- Scoop generous blobs of dough onto lined baking sheets, spacing them apart.
- Bake for 10-12 minutes or until edges are soft but not overbaked.
- Cool on the tray for a few minutes before transferring to a wire rack.
Notes
For best results, chill the dough to prevent spreading. Sprinkle with flaky salt before serving for extra flavor.
