Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix all dry ingredients: flour, brown sugar, pumpkin spice, baking soda, and salt.
- In another bowl, blend the wet ingredients: canned pumpkin, vegetable oil, and vanilla.
- Pour the wet ingredients into the dry and mix until just combined.
- Grease a cake pan, pour in the batter, and smooth it out.
- Bake for 33-38 minutes, checking for doneness at 30 minutes.
- Let it cool before serving.
Notes
For the frosting, beat together vegan cream cheese, plant butter, powdered sugar, and a dash of vanilla until smooth. This frosting pairs perfectly with the cake.
