Delicious mini apple pies baked in a muffin tin for easy serving and minimal mess.

Ingredients

  • Store-bought pie dough
  • Diced apples (Granny Smith, Honeycrisp, or Fuji)
  • Brown sugar
  • White sugar
  • Cinnamon
  • Lemon juice
  • Egg (for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie dough and cut circles slightly larger than the muffin cups.
  3. Press the dough circles into the muffin tin.
  4. In a bowl, mix diced apples, brown sugar, white sugar, cinnamon, and lemon juice.
  5. Spoon the apple mixture into the dough cups.
  6. Top with a second circle of dough or create a lattice on top.
  7. Pinch the edges, cut vents in the tops, and brush with egg.
  8. Bake for about 20 minutes until bubbly and golden.
  9. Let cool before removing from the tin.

Notes

These pies can store at room temperature for 3 days or be frozen for up to 2 months.
