Ingredients
- Store-bought pie dough
- Diced apples (Granny Smith, Honeycrisp, or Fuji)
- Brown sugar
- White sugar
- Cinnamon
- Lemon juice
- Egg (for brushing)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the pie dough and cut circles slightly larger than the muffin cups.
- Press the dough circles into the muffin tin.
- In a bowl, mix diced apples, brown sugar, white sugar, cinnamon, and lemon juice.
- Spoon the apple mixture into the dough cups.
- Top with a second circle of dough or create a lattice on top.
- Pinch the edges, cut vents in the tops, and brush with egg.
- Bake for about 20 minutes until bubbly and golden.
- Let cool before removing from the tin.
Notes
These pies can store at room temperature for 3 days or be frozen for up to 2 months.
