Ingredients

  • 1.5 lbs bone-in, skin-on chicken thighs
  • 2 large potatoes, cubed
  • 2 carrots, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 4 cups chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons gochugaru (Korean chili flakes)
  • 1 tablespoon sesame oil
  • Green onions, chopped for garnish
  • Sesame seeds for garnish
  • Steamed white rice, for serving

Instructions

  1. Brown the chicken thighs in a pot over medium heat until golden on all sides.
  2. Add chopped onion, garlic, and ginger, sautéing until fragrant.
  3. Stir in gochugaru, soy sauce, and sesame oil to coat the chicken and aromatics.
  4. Add potatoes, carrots, and chicken broth, bringing to a boil.
  5. Reduce heat to low, cover, and simmer for 50 minutes until chicken and vegetables are tender.
  6. Adjust spice levels to taste and thicken the sauce if desired.
  7. Serve hot, garnished with chopped green onions and sesame seeds, alongside steamed rice.

Notes

To manage spice levels, start with less gochugaru and adjust to your preferred heat. Use fresh garlic and ginger for best flavor.
