- ½ cup unsalted butter
- 3–4 tablespoons cold water
- 2 cups sliced leeks
- 2 medium potatoes, thinly sliced
- Olive oil for sautéing
- Cream for brushing
Instructions
- Make the pastry dough by combining flour, salt, and butter until it resembles coarse crumbs.
- Add cold water gradually to form a dough, wrap in plastic, and refrigerate.
- Sauté sliced leeks in olive oil until soft.
- Roll out the dough slightly and layer sliced potatoes on it.
- Add the sautéed leeks, season, and fold the edges of the galette over.
- Brush with cream and bake at 375°F (190°C) until golden brown.
Notes
For best results, keep ingredients cold, slice potatoes evenly, and let the galette rest before baking.
