Ingredients

  • ½ teaspoon salt
  • ½ cup unsalted butter
  • 34 tablespoons cold water
  • 2 cups sliced leeks
  • 2 medium potatoes, thinly sliced
  • Olive oil for sautéing
  • Cream for brushing

Instructions

  1. Make the pastry dough by combining flour, salt, and butter until it resembles coarse crumbs.
  2. Add cold water gradually to form a dough, wrap in plastic, and refrigerate.
  3. Sauté sliced leeks in olive oil until soft.
  4. Roll out the dough slightly and layer sliced potatoes on it.
  5. Add the sautéed leeks, season, and fold the edges of the galette over.
  6. Brush with cream and bake at 375°F (190°C) until golden brown.

Notes
