- 2 cups chickpea flour (besan)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon asafoetida (hing)
- Salt to taste
- Oil for deep frying
Instructions
- In a large mixing bowl, sift the chickpea flour with the turmeric, chili powder, asafoetida, and salt.
- Add enough water to form a smooth, thick dough.
- Using a sev maker or a piping bag, press the dough out into thin strands.
- Heat oil in a deep frying pan to around 350°F (175°C).
- Fry the strands in small batches until they are golden brown and crispy.
- Remove and drain on paper towels to absorb excess oil.
Notes
Ensure the oil temperature is maintained to avoid oily Sev. Store in an airtight container to keep them crunchy.
