- 1 cup pecans
- 1/4 cup brown sugar
- 1/4 tsp salt
- 4 oz goat cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the carrots with olive oil, salt, pepper, and garlic powder (if using).
- Spread the carrots out on a baking sheet, ensuring they are not crowded.
- Roast the carrots for 25-30 minutes, or until tender.
- In a skillet, cook the pecans with brown sugar and salt, stirring until glossy and sticky, then cool on a plate.
- Once the carrots are done, transfer them to a platter and top with crumbled goat cheese and the candied pecans.
Notes
Use fresh, high-quality carrots for the best flavor. Rainbow carrots add a fun presentation. Feel free to mix in other vegetables like brussels sprouts or sweet potatoes.
