- 1/2 cup sugar

- 1 tsp cinnamon
- 1 cup milk (whole or almond)
- 1/4 cup vegetable oil (or melted butter)
- 2 large eggs (room temperature)
- 1 cup raisins (plump, soaked if desired)
- 1 cup bran cereal (high-fiber)
Instructions
- Preheat your oven to 375°F (190°C) and either grease a muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.
- In a separate bowl, mix the milk, vegetable oil (or melted butter), and eggs until smooth.
- Gradually combine the wet mixture with the dry ingredients, stirring gently until just incorporated.
- Fold in the bran cereal and raisins, mixing until evenly combined.
- Fill each muffin cup about two-thirds full with the batter.
- Bake for 18-20 minutes or until golden brown.
- Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack. Enjoy!
Notes
For extra moist muffins, soak the raisins beforehand. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
