Description

These moist and flavorful Raisin Bran Muffins are perfect for breakfast or a quick snack, loaded with fiber and easy to make.


Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 cup milk (whole or almond)
  • 1/4 cup vegetable oil (or melted butter)
  • 2 large eggs (room temperature)
  • 1 cup raisins (plump, soaked if desired)
  • 1 cup bran cereal (high-fiber)

Instructions

  1. Preheat your oven to 375°F (190°C) and either grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.
  3. In a separate bowl, mix the milk, vegetable oil (or melted butter), and eggs until smooth.
  4. Gradually combine the wet mixture with the dry ingredients, stirring gently until just incorporated.
  5. Fold in the bran cereal and raisins, mixing until evenly combined.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 18-20 minutes or until golden brown.
  8. Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack. Enjoy!

Notes

For extra moist muffins, soak the raisins beforehand. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
