- 15 oz canned pumpkin (pure)
- 1 cup brown sugar
- 2 large eggs
- 1 cup oats
- 1 tsp cinnamon
- 1/2 cup cold butter
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine canned pumpkin, eggs, brown sugar, vanilla, and spices until smooth.
- Spread the pumpkin mixture in an 8×8 baking dish.
- In another bowl, mash together cold butter, oats, flour, brown sugar, and additional cinnamon until crumbly.
- Sprinkle the topping generously over the pumpkin layer.
- Bake for 40-45 minutes until the top is golden and the pumpkin filling is just barely wobbly.
- Allow to cool before serving.
Notes
Serve warm with vanilla ice cream or whipped cream. This can be made ahead and reheats well.
