Ingredients

  • 1 can (15 oz) pumpkin puree
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup chopped pecans (or walnuts)
  • 1/2 cup milk (any milk alternative)

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine flour, sugar, baking powder, salt, and optional cinnamon and nutmeg.
  3. In another bowl, whisk together pumpkin puree, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just blended (it will be lumpy).
  5. Spread the batter in a greased 9-inch baking dish.
  6. Sprinkle brown sugar and chopped pecans on top, then gently pour hot water over it all.
  7. Bake for 35 to 40 minutes until the top is golden and pecans are toasted.
  8. Let it sit for 10 minutes before serving.
