Description

Soft, buttery rolls filled with a rich almond paste, perfect for brunch or gatherings.


Ingredients

  • 3 cups all-purpose flour (about 360g)
  • 1/4 cup sugar
  • 2 1/4 tsp instant yeast
  • 1 tsp salt
  • 1/2 cup warm milk (105–110°F/40–43°C)
  • 1/4 cup warm water
  • 1/4 cup melted butter
  • 1 large egg
  • 1/2 cup almond paste (crumbled)
  • 1/3 cup softened butter
  • 1/2 cup brown sugar
  • 1 tsp almond extract
  • 1/2 cup sliced almonds

Instructions

  1. Make an enriched yeasted dough by combining flour, sugar, yeast, and salt in a mixing bowl.
  2. In a separate bowl, mix warm milk, water, melted butter, and egg.
  3. Combine the wet and dry ingredients, knead until smooth and elastic (8–10 minutes by hand or 5–7 minutes with a mixer).
  4. Allow dough to rise until doubled in size (about 1.5–2 hours).
  5. Roll the dough into a 12×16-inch rectangle.
  6. Spread almond filling on the dough and roll tightly into a log.
  7. Cut into 12 pieces, place in a greased 9×13-inch pan, and proof for 30–40 minutes.
  8. Bake at 350°F (175°C) for about 22–25 minutes until golden and set.
