Ingredients

  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 2 tablespoons sugar (for sweet versions)
  • 34 tablespoons ice water
  • Egg wash (optional, or egg alternative)
  • Filling of choice (e.g., jam, cheese, shredded chicken)

Instructions

  1. Cut the cold butter into the gluten-free flour blend, xanthan gum, salt, and sugar until it resembles coarse cornmeal.
  2. Add ice water a tablespoon at a time until the dough just holds together.
  3. Wrap the dough and chill for at least 30–60 minutes.
  4. Roll the dough to about 1/8-inch thickness on a lightly floured surface.
  5. Cut into circles or rectangles.
  6. Add about 2 tablespoons of filling per pastry and fold, sealing the edges with a fork.
  7. Chill the filled pastries for 10–15 minutes on a baking sheet.
  8. Bake at 375°F (190°C) for 18–22 minutes until golden brown.
