Description

A fun and crunchy Tex Mex-inspired dish that combines crispy cabbage, smoky sauce, and crunchy Fritos for a hearty meal or side dish.

Ingredients

Scale
  • 1 bag coleslaw mix (or shredded cabbage)
  • 1 cup cooked ground beef or shredded chicken (optional)
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup corn (optional)
  • 1/2 cup chipotle sauce (or substitute)
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 cup shredded cheddar or pepper jack cheese
  • 2 cups Fritos (added before serving)
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste

Instructions

  1. Prepare your cabbage by slicing it into thin ribbons and sprinkling with salt. Let it sit for 10 minutes.
  2. Drain any liquid from the cabbage and add your dressing.
  3. Mix in any protein, black beans, corn, and cheese.
  4. Add the Fritos just before serving to maintain their crunch.
  5. Enjoy this dish with a squeeze of lime.

Notes

Keep the crunchy ingredients separate until serving to prevent sogginess. Adjust the sauces to control the heat and flavor.
