- 4 cups kale, chopped
- 2 Honeycrisp apples, diced
- 1/2 cup almonds, chopped
- 1/4 cup goat cheese, crumbled (or feta/cheddar)
- 1/4 red onion, thinly sliced
Instructions
- In a large bowl, combine chopped kale, diced apples, chopped almonds, crumbled cheese, and sliced onions.
- In a separate jar, combine ingredients for Almond Apple Dijon Dressing: almond butter, apple cider vinegar, Dijon mustard, maple syrup, olive oil, salt, and pepper. Shake to combine.
- Dress the salad just before serving for maximum crunch.
- Serve immediately or refrigerate components separately until ready to serve.
Notes
To keep apples from browning, squeeze a little lemon juice on them before storing. Salad components can be stored separately and assembled just before serving.
