  • 1 1/2 cups fresh blueberries (or frozen)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup brown sugar (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt. Slowly add this mixture to the wet ingredients, alternating with milk. Mix until just combined.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Pour the batter into the prepared cake pan and spread it evenly. If desired, sprinkle the brown sugar over the top.
  7. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra flavor, toss the blueberries in flour before adding them to the batter. Make sure your butter is softened to room temperature for a light texture.
