- 2 lbs bone-in chicken pieces
- 2 tablespoons Jamaican curry powder
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, sliced (optional)
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Marinate chicken with curry powder, garlic, and ginger for at least 1 hour or overnight for maximum flavor.
- Sauté onions, bell peppers, and scotch bonnet pepper in a large pot until soft.
- Brown the marinated chicken pieces in the pot.
- Add coconut milk and chicken broth, then let it simmer until the chicken is tender.
- Adjust seasoning with salt as needed.
- Serve over rice or with naan and garnish with cilantro.
Notes
For best results, use bone-in chicken for extra flavor. You can omit the scotch bonnet for a milder dish.
