Ingredients

  • 2 tablespoons Jamaican curry powder
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, sliced (optional)
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate chicken with curry powder, garlic, and ginger for at least 1 hour or overnight for maximum flavor.
  2. Sauté onions, bell peppers, and scotch bonnet pepper in a large pot until soft.
  3. Brown the marinated chicken pieces in the pot.
  4. Add coconut milk and chicken broth, then let it simmer until the chicken is tender.
  5. Adjust seasoning with salt as needed.
  6. Serve over rice or with naan and garnish with cilantro.

Notes

For best results, use bone-in chicken for extra flavor. You can omit the scotch bonnet for a milder dish.
