- 1 cup Salted Butter
- 1 cup Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 3 cups All-Purpose Flour
- 2 teaspoons Cream of Tartar
- 1 teaspoon Baking Soda
- 2 tablespoons Cinnamon
- 2 tablespoons White Sugar
- 3 cups Apples (diced)
- 1/2 cup Brown Sugar
- 2 tablespoons Cornstarch
- 1 teaspoon Pumpkin Pie Spice
- 1/4 cup Water
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, and beat until well combined.
- In another bowl, mix the flour, cream of tartar, and baking soda. Gradually add to the wet mixture, stirring until a soft dough forms.
- In a separate bowl, combine the diced apples, brown sugar, cornstarch, pumpkin pie spice, and water. Stir until the apples are well-coated.
- Take a scoop of the cookie dough and flatten it in your hand. Place a spoonful of the apple mixture in the center and fold the dough around it to form a ball.
- In a small bowl, mix the cinnamon and white sugar for rolling. Roll each dough ball in the cinnamon-sugar mixture.
- Place the cookie balls on a baking sheet lined with parchment paper, leaving space between each one.
- Bake for about 12-15 minutes, or until the edges are golden and the center is set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for 4-5 days. Can freeze for longer storage.
