Delicious and cozy apple pie cupcakes with a gooey center and creamy frosting, perfect for any occasion.

Ingredients

  • 23 medium Fresh Apples (Granny Smith or Gala)
  • 1 ½ cups All-Purpose Flour
  • ¾ cup Sugar
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 8 oz Cream Cheese (for frosting)
  • Additional ingredients for filling: 2 tbsp Butter, ¼ cup Brown Sugar, pinch of Nutmeg, splash of Vanilla, Milk, Eggs

Instructions

  1. Peel and chop the apples into small dice. Sauté in a pan with butter and brown sugar until soft. Add cinnamon and nutmeg, then cool the mixture.
  2. In a separate bowl, whisk together the dry ingredients: flour, sugar, baking powder, and cinnamon.
  3. In another bowl, mix the wet ingredients: milk, eggs, melted butter, and vanilla.
  4. Combine the wet and dry ingredients without overmixing.
  5. Preheat the oven to 350°F (175°C). Line a muffin tin with papers and fill halfway with batter, add a spoonful of apple mixture, then top with more batter.
  6. Bake for 15-20 minutes until tops bounce back when poked. Cool on a rack.
  7. For frosting, combine softened cream cheese, butter, powdered sugar, and cinnamon. Frost cooled cupcakes.

Notes

Store in an airtight container on the counter for up to 2 days; refrigerate for longer storage. Can be frozen, just thaw before serving.
