Ingredients

- 1 cup Alfredo sauce
- Salt and freshly ground black pepper, to taste
- 1 pound uncooked shrimp, peeled and deveined
- 1 cup mozzarella, shredded
- 4 large flour tortillas
- Vegetable oil for frying
- 1/2 cup plain breadcrumbs
- 2 big eggs, beaten
Instructions
- In a large bowl, combine the Alfredo sauce, shrimp, pepper, and a sprinkle of salt. Let sit for a few minutes.
- Spread a tortilla on a work surface and add some shrimp mixture in the center.
- Top with mozzarella.
- Fold the sides of the tortilla in and roll it up tightly.
- Roll the burrito in the beaten eggs, then coat with breadcrumbs.
- Heat about 2 inches of oil in a deep pan over medium heat.
- Once the oil reaches 350°F, gently drop the burrito bites in and fry for 3-4 minutes, flipping occasionally until golden brown.
- Remove and place on paper towels to drain excess oil. Serve warm with extra Alfredo sauce.
Notes
Make sure the oil is hot enough for perfect crispiness. You can also use other proteins or vegetables as filling.
