Ingredients

  • 2 cups All-Purpose Flour (or whole wheat flour)
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt

  • 1/2 cup Unsalted Butter (or margarine)
  • 1 cup Brown Sugar (or white sugar)
  • 2 large Eggs (or flaxseed meal)
  • 1 teaspoon Vanilla Extract (or almond extract)
  • 1 tablespoon Orange Zest (or lemon/lime zest)
  • 1 cup Dried Cranberries (soaked)
  • 1 cup Dried Apricots (soaked)
  • 1 cup Golden Raisins (soaked)
  • 1/2 cup Bourbon (or orange juice)
  • 1/2 cup Granulated Sugar (or powdered sugar)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line your mini loaf pans with parchment paper.
  2. In a bowl, mix together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In another bowl, cream the unsalted butter and brown sugar together until light and fluffy.
  4. Beat in the eggs one at a time (or mix in flaxseed meal for a vegan option) until well combined.
  5. Stir in the vanilla extract and orange zest.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Fold in the soaked dried cranberries, apricots, and golden raisins. Pour in the bourbon and mix until everything is well blended.
  8. Divide the batter evenly among the mini loaf pans.
  9. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the loaves cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Notes

These loaves can be dressed up with a dusting of powdered sugar or a simple glaze. Store in an airtight container for up to a week or freeze for up to three months.
