- 1 cup Dried Cranberries (soaked)
- 1 cup Dried Apricots (soaked)
- 1 cup Golden Raisins (soaked)
- 1/2 cup Bourbon (or orange juice)
- 1/2 cup Granulated Sugar (or powdered sugar)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line your mini loaf pans with parchment paper.
- In a bowl, mix together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
- In another bowl, cream the unsalted butter and brown sugar together until light and fluffy.
- Beat in the eggs one at a time (or mix in flaxseed meal for a vegan option) until well combined.
- Stir in the vanilla extract and orange zest.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the soaked dried cranberries, apricots, and golden raisins. Pour in the bourbon and mix until everything is well blended.
- Divide the batter evenly among the mini loaf pans.
- Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaves cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Notes
These loaves can be dressed up with a dusting of powdered sugar or a simple glaze. Store in an airtight container for up to a week or freeze for up to three months.
