Ingredients

  • 1 lb (450 g) steak
  • Salt and pepper to taste
  • 1 tbsp oil
  • 1 minced shallot
  • 3 garlic cloves, minced
  • 2 tbsp butter
  • 1/2 cup (120 ml) beef broth
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan

Instructions

  1. Boil the pasta in well-salted water until al dente (about 8-10 minutes).
  2. Season the steak with salt and pepper, then sear in a hot cast-iron skillet with oil for 3-4 minutes per side.
  3. Rest the steak for 5-10 minutes before slicing thin against the grain.
  4. In the same pan, sauté the shallot and garlic in butter, then deglaze with beef broth.
  5. Stir in heavy cream and Parmesan, simmer gently until thickened.
  6. Toss the sauce with pasta and sliced steak, adding reserved pasta water to adjust the texture.
