Description

Ingredients

  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract

  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 to 1.5 cups mini marshmallows
  • 1/4 cup melted chocolate (60-70% cacao)

Instructions

  1. Cream room-temperature butter with sugars until light.
  2. Add eggs and vanilla, mixing until well combined.
  3. Whisk together dry ingredients: flour, cocoa powder, baking soda, and salt.
  4. Add dry mixture to wet ingredients, mixing until just combined.
  5. Fold in mini marshmallows gently.
  6. Scoop 1.5 to 2 tablespoons of dough onto a parchment-lined baking sheet.
  7. Chill the dough for 30-60 minutes to control spread.
  8. Drizzle melted chocolate over each cookie and swirl with a skewer.
  9. Bake at 350°F (175°C) for 10-12 minutes until edges are set and centers remain soft.
  10. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use high-quality cocoa for the best flavor. If using large marshmallows, chop finely and toss with flour to avoid sinking.
